Title: Salmon, Lime-Seasoned

1lbSalmon
1/4cCooking oil
1/4cLime juice
1tbWater
1tbHoney
5cMixed greens; shredded
1/2cRadishes; shredded
  Lime slices

Thaw fish steaks if frozen. Rinse fish; pat dry with paper towels. Place fish in a plastic bag set in a shallow dish.

For marinade, in a small mixing bowl stir together cooking oil, lime juice, water, and honey. Pour over fish. Close bag; marinate in refrigerator for 6 hours, turning bag occasionally to distribute marinade.

In a large mixing bowl toss together shredded greens and radishes; set aside. Drain fish, reserving marinade.

Place fish on a greased grill rack. Grill on an uncovered grill directly over medium-hot coals for 5 minute. Using a wide spatula, carefully turn fish over. Grill for 3 to 7 minutes more or till fish flakes easily when tested with a fork.

Meanwhile, in a small saucepan heat reserved marinade till bubbly. Pour hot marinade over greens; toss to wilt slightly. Transfer greens to a platter. Place fish on top of the greens. If desired, sprinkle with salt and pepper. Garnish with lime slices. Makes 4 servings.

BROILING DIRECTIONS: Prepare Lime-Seasoned Salmon, except place fish on a greased rack of an unheated broiler pan. Broil 4 inches from the heat for 5 minutes. Using a wide spatula, carefully turn fish over. Broil for 3 to 7 minutes more or till fish flakes easily when tested with a fork. Continue as directed.
